The Blends
Each cognac is different. They all age naturally in oak barrels but not at the same pace.
The blender’s skill is to find the most perfect alliance between all those different cognacs to get the best combination of aromas, taste and global perception.
Once the original blend is made (55% to 65% alc.), distilled water is added little by little to bring the alcohol down to the desired proof (typically from 43% for us).
It can take up to 3 years to get a blend as perfect as possible.
The Cognac categories
Our bottled Cognac is divided into 3 main categories:
V.S. (Very Special):
The youngest cognac. 4 years minimum in barrels. Mostly served as a long drink.
V.S.O.P. (Very Superior Old Pale):
Minimum ageing of 10 years.
X.O. (Extra Old):
Minimum ageing of 20 years. Usually the jewel of the house.
All other names enter one of those categories (Napoléon, Réserve, Hors d’Age).
